Ropa Vieja


Makes 6 Servings

2 lb stew beef or similar
2 red bell peppers, sliced
2 tsp olive oil
2 TBSP green olives
1 can diced tomatoes
3 cloves garlic, diced
1 onion, chopped
2 large pickled jalapenos, sliced
1 TBSP cumin
1 tsp salt
1/4 cup water
Yellow rice


Step 1: Saute Peppers
Add oil and peppers to Instant Pot and saute for a few minutes

Step 2: Cook Rest of Ingredients
Cancel the saute and remove peppers. Add in the rest of the ingredients except for the rice. Cook on High Pressure for 60 minutes. Release the pressure after waiting for 15 minutes of a natural release and remove the beef to a cutting board.

Step 3: Cook Rice
Start to cook the Yellow Rice per package instructions. It'll take about 20-25 minutes and can be done while you are finishing up the last Instant Pot step.

Step 4: Simmer and Shred
Select the saute function again and simmer the liquid for 15 minutes to reduce it to about 3 1/2 cups. Skim and discard any fat. Shred the beef along the grain, and return it and the bell peppers to the pot and stir to combine.
